Green Beans with Smoked Tofu and Almonds
Fresh green beans slightly cooked in a bath of salted water. Spanish onions sliced thin and caramelized to a golden shade. Smoked tofu enhanced with even more smokiness from the gentle spiciness of Pimenton de la Vera (smoked paprika). A topping of thinly sliced toasted almonds. These are the flavors and smells of a vegan summer meal!
This dish is extremely simple to prepare. It is great served warm as a side dish – or even the main attraction for a light summer dinner. It is equally delicious served at room temperature – perhaps as an addition to a summer buffet.
