Indian-Style Lentil and Rice Pancakes

These lightly-fermented pancakes originate from the southern part of India. They are usually used as a bread replacement when eating curries. They make a great gluten-free ‘flatbread’ alternative. But be warned, they do require some advanced planning because the rice and dal need a night of soaking, then the batter needs another night to lightly ferment. These light pancakes are extremely easy to digest and filled with fiber, which makes them very good for a healthy gut! Yield: makes about 8-12 pancakes
