Israeli-Style Roasted Eggplant and Spicy Tahini

This is an excellent recipe to make whenever you are in the mood for the flavors of the Middle East. It’s quick, inexpensive, simple and quite satisfying. Just make sure to make a bit of our Spicy Tahini Sauce beforehand…although even this sauce only takes about 10 minutes to make.

Serve alone, as part of a mezze offering or as an accompaniment to a big plate of Whole Wheat Bulgur Köfte.
