Ligurian Mescina

This Ligurian bean soup is like a Tuscan bean soup – both use a combination of beans and parmesan cheese to flavor and thicken the broth.  In my version, I eliminate the parmesan cheese and replace it with nutritional yeast which gives the soup a similar flavor.  The Ligurian version differs only in the beans that are used – garbanzo beans.  Yield:  about 8-10 servings
