Spicy Carrot and Fennel Salad

This colorful Moroccan-style salad is a delight to eat – and simple to make.  I think it epitomizes what a Moroccan salad should be: spicy, acidic, fresh and slightly sweet.

Try to use the freshest carrots and fennel bulbs you can find and try to avoid cooking the carrots too long in order to preserve their slight bite.
