Tahini and Oats Energy Bars

I’m always thinking of new ways to create exciting snacks or energy bars. I like having snacks available while out on a run or bike ride – or simply something to grab while I’m out and about or writing something at home. I guess that makes me a snack freak.

I use the method in this recipe the most. It has become a template recipe because many ingredients can be swapped with something else to create an entirely new flavor and texture experience.

I usually portion energy bars into roughly 3 cm (roughly 2 inches) squares, but I don’t actually use a ruler.  This size is perfect for packing away and carrying with me while exercising. You can portion them in many different shapes, but I recommend keeping them smallish simply because they are easier to store in individual portions.

You will need to have one form on hand…something like a 20-cm x 20-cm (9-inch) square pan or a 24-cm x 16-cm (11-inch x 7-inch) rectangle pan. Be sure to use gluten-free oats if you want to make these gluten-free!

Difficulty: simple
Yield: makes about 30 3-cm squares (about 1-inch)
