Tofu Paneer with Leafy Greens
This variation of the classic North Indian dish Saag Paneer is richly seasoned with a combination of warm spices. I replaced the classic Indian paneer with boiled and lightly sauteed tofu to resemble the flavor of the original dish. I use a combination of wilted spinach and collard greens to complete this bowl of healthy Indian-inspired sunshine.
Serve with a big portion of basmati rice – preferably whole grain.
