Vegan Tiramisu

Tiramisu is a classic Italian dessert originating from Venice. The classic recipe is rich and creamy, relying on egg-enriched sweetened mascarpone as the base that sits over coffee-soaked ladyfinger biscuits.

My version transforms this delicious dessert into something completely different…yet very familiar in flavor and texture. I am overwhelmed and extremely satisfied with my original vegan version – and that’s saying a lot from a self-confessed Italian dessert junkie (well a former one at least).

Difficulty: moderate
Yield: makes about 4-6 servings (about a 15-cm/6-inch form)
