Fruit pastes make a great alternative to sugar. Try adding a pinch of spice such as cinnamon or sea salt and a bit of fresh lemon juice to add a different flavor note. Fruit pastes will keep for over a week in the refrigerator. You can also freeze fruit pastes for several months – they resist freezing solid, which makes it great for scooping out just what you need after letting it sit for about 30 minutes at room temperature.

About 100 grams dried fruit of choice
250 ml. water
1-2 tsp cinnamon (optional)
- Prepare the dried fruit by adding them to a glass jar or container (make sure to pit dates if you are using them).
- Add the water and refrigerate for a couple of hours.
- Once reconstituted, blend the dried fruit, water and any seasoning in a high-speed blender until smooth.
- Refrigerate or freeze the paste until ready to use.
