Fattoush (Middle Eastern Bread Salad)

This is a wonderful tasting salad, based on a selection of fresh summer ingredients like green herbs and fresh tomatoes. It is very similar to a Panzanella salad – a bread salad from the Tuscan region of Italy.  The addition of salad ingredients and ground sumac distinguish this salad from its Italian cousin.

If you have the time, make the salad base in advance so the tastes will have time to mingle; add the crumbled pita bread and tomatoes just before serving so they will remain partially intact. This recipe is adapted from Paula Wolfert’s book on
