Goma Toasted Sesame Dressing
Sesame-based dressings for vegetables are typically called “goma” in Japan. There are numerous variations to this dressing that is typically served thick and creamy. The foundation of the dressing typically includes ground sesame seeds, rice vinegar, sugar, soy sauce and a small amount of sesame oil. My version adds white miso and grated ginger and garlic to bring a bit of punch and umami to the dressing.
