Indian-Style Lentil Soup
The spice mixture is called Tadka, which is quite common in preparing Indian-style soups. It is traditionally made with ghee (a type of clarified butter), but I have elected to use extra virgin olive oil as a replacement. You can puree all of the soup or just part of the soup to create a more rustic version.
Yield: makes about 2 liters (2 quarts)
