Plum Clafoutis
Clafoutis are a classic french preparation of fresh fruit (traditionally cherries) contained with a simple egg-enriched batter and baked together. The juice from the fresh fruit mixes with the batter, which crisps slightly and turns into a sublime dessert. This vegan version replaces the eggs with aquafaba and the butter with unrefined rapeseed oil. It is simply one of the best vegan desserts I know…
Yield: about 8 servings (one 24-cm pie pan)
